Belgian-Style Imperial Stout 11.64% ABV
In the spirit of the Franco-Belgian Military Accord of 1920, this beer unites a Belgian-style Imperial Stout with one-year aging in a French Cognac oak foudre, coalescing into aromas and flavors similar to dark roast coffee & dark chocolate,
black cherries, plums, hints of molasses and slight smoke, all pairing beautifully with the French oak tannins, medium
body, gentle warming and dry finish.
Belgian-Style Abbey Single Ale
4.9% ABV
This is a Belgian-style abbey single crafted like those that Trappist monks brew for their own daily consumption. It is light bodied and pale in color with pleasant, spicy phenolics and subtle, fruity esters reminiscent of midwest heirloom fruit trees that give way to a floral and dry finish from noble hops and Belgian yeast.
Weissbier 7% ABV
Rules are meant for breaking when it comes to beer styles. This unrecognized beer style (Imperial Hefeweizen) is similar in flavor and aroma to our Weissenheimer Hefeweizen, but brewed with only the first-wort runnings for twice the strength and body
Altbier 5.2% ABV
Altercation is a German-style altbier with a malty backbone, notes of caramel, and is satisfyingly full-bodied and well-hopped.
Belgian Strong Golden Ale 6.6% ABV
The best of both brewing worlds: A hybrid Belgian-American strong pale ale with golden-copper color, medium body and maltiness, low caramel/toasty malt flavor, floral and citrus-like American-variety hops used to produce high hop bitterness, flavor and aroma but some phenolic spiciness and high fruity esters from Belgian ale yeast.
Rye Wine-Style Ale Aged with Oak
12.1% ABV
Evoking memories of our grandparents’ home laden with anitique oak furniture, ornate woodwork, pipe tobacco, toffee candies and perhaps an old, hidden bottle of sherry, Antiquity Rye Wine is a dark copper ale with a spicy/ peppery note from rye combining rich maltiness, oak character and aromas/flavors like melted caramel, toffee, vanilla, sweet chocolate and raisins in a full-bodied beer nicely balanced with a dry, hoppy finish.
Imperial Pilsen-Style Beer brewed with Oak Spirals 10.2% ABV
Bela may sound like a sweet name, but she’s actually a little bitter. We use generous amounts of Czech Saaz hops in this Imperial Pilsner, showcasing the beautiful spicy and earthy noble hop aroma & flavor, with a hop bitterness that is balanced by a gentle warming, medium body, oak tannins & residual malty sweetness that still finishes dry but is just enough to remind you that Bela might have a sweet side to cozy up to after all.
American-Style Stout 6.7% ABV
An American Stout with medium malt sweetness, chocolate and roasted malt flavor and aroma, dry-roasted bitterness in the finish, full-body and assertive citrus hop bitterness, aroma and flavor.

Black IPA 7.2% ABV
An American-style Black Ale, with all the associated high hop bitterness, citrus/floral hop flavor and aroma, medium-high alcohol content and medium body one would expect with an IPA, but distinguished by its black color obtained by a unique mashing process that reduces the amount of burnt or roasted bitterness, astringency, flavor and aroma from black malts that would otherwise be expected in an American Stout.

Funkengruven is a fusion of beer styles. We brew half the batch normally and kettle-sour the other half. Summit & Simcoe hops, along with added grapefruit, produce a funky harmony of tart, citrus flavors & aromas that’ll be sure to top the charts.

Dunkelweizen 4.9% ABV

Fruity and phenolic esters are evident but subdued, the color is dark brown and the beer is appropriately cloudy with yeast. The Duke of Normington is the powerful elder statesman to our family of saisons. The nose of this imperial saison is reminiscent of black pepper & hibiscus, which is then met with flavors of added coriander and hints of cherry bubblegum esters. The beer’s medium body is swept away by a bone-dry finish and subtle notes of traditional spicy Belgian yeast character.

Imperial or Double IPA 10% ABV
Our mission for this Imperial or ‘Double’ India Pale Ale is to overload the beer with hops for an intense hop bitterness, flavor and aroma while still being balanced by a big malt profile, resulting in a hoppy beer with more dimension. This beer is light copper in color with some hop haze from overloading with dry hops as well.
Kölsch 4.8% ABV
Kolsch is characterized by a golden color and a slightly dry, subtly sweet softness on the palate, yet crisp. Light-bodied, low hop flavor and aroma and low fruity esters.
Blonde Ale with Lemongrass & Lemon Peel 4.9% ABV
This summertime seasonal beer is light straw in color and has a crisp, dry palate, light body and light malt sweetness. Low to medium hop floral aroma is present, while hop bitterness is low. Fruity esters can be perceived, but the citrus flavors of added lemongrass & lemon peel make this a perfect beer to enjoy while watching your neighbor mow their grass.

Sour Pear Ale presents with a pronounced aroma of fresh pears and Brettanomyces with light straw color, a mouthfeel and body with is velvety soft from fruit skins, similar to sauvignon blanc wine, and a bright flavor evocative of ripe, fleshy pears.
Irish Stout 4.6% ABV
This medium-light bodied dry stout has an initial malt & light caramel flavor profile with a distinctive dry-roasted barley bitterness in the finish. Head retention and rich character are part of its visual character. This beer is served using a mixed gas of nitrogen & carbon dioxide.
English Porter 5.9% ABV
In honor of our brewmaster's grandfather who attempted to homebrew long ago back at the family farm, this beer is a full-bodied, London-style robust porter that has a black color with a deep-red tint and strong roast malt flavor balanced by high hop bitterness & aroma and fruity esters. To Pappy!

Our Saint Dekkera® Reserve Sour Ale series are naturally soured by spontaneous/wild secondary fermentation and aging in oak barrels with microflora wonderfully unique to our downstate Illinois terroir, where we embrace the individual, wild character of each barrel to produce beers with a wide array of acidity, sourness and unadulterated funkiness.
Our Framboise was the 2016 Silver Medal Winner - Fruited Wood-and Barrel-Aged Sour Beer - at the Great American Beer Festival®. It was also the 2009 Silver & 2010 Bronze Medal Winner for Wild Acidic - Belgian Sour at FOBAB. Our Flanders Oud Bruin was the 2011 Silver & 2020 Gold Medal Winner for Wild Acidic - Belgian Sour at FOBAB.
Farmhouse Ale - Saison 6% ABV
This Belgian-style Saison has golden/light copper color, light body, medium hop bitterness, flavor & aroma, medium-low malt flavor & aroma and spiciness from added coriander. Fruity esters dominate the aroma while complex alcohols, acidity, low Brettanomyces character and clove and smoke-like phenolics from Saison yeast.
Robust Porter with Pumpkin Added 5.8% ABV
Our seasonal Pumpkin Porter is made by using several hundred pounds of pumpkins. The beer is black in color with a slight dark-reddish tint. Cinnamon, coriander, allspice, ginger root and nutmeg combine for a beer you only wish your grandma could make.

The Brut IPA is extremely effervescent and dry, similar to Champagne. Featuring a pale straw color, this beer exhibits low levels of bitterness. Fruity flavors and aromas are achieved by late and dry hopping. It was brewed using a special hop blend from Pink Boots Society, which works to"assist, inspire, and encourage women beer professionals" and benefits a scholarship fund for women in the beer industry to advance their careers through education.

In collaboration with Listermann Brewing Company. This collaboration blended the Imperial dark ale, Chickow!, with Dosvidanya Imperial Stout. Both were aged in oak bourbon barrels.
Lemon-Tea Infused New England-style Double IPA 7% ABV
In collaboration with Durty Bull Brewing Company.. For this collaboration we added an abundance of Southern Cross hops to this New England-style Double IPA. Notes of spice, citrus, tropical fruit and pine are enhanced by the addition of lemon-tea.
Lager with Corn & Frosted Flakes Cereal Added 5% ABV
In collaboration with Miller Park Zoological Society. Several of the local breweries brewed a special beer to benefit Miller Park Zoo’s “Brews for the Zoo”. Each brewery was given the opportunity to choose a specific zoo animal to theme our beer after & we’ve chosen tiger. Our beer named “Here KittyKitty” is a lager brewed with corn & frosted flakes cereal.

Berliner-Style Weisse Beer with Pineapple, Sweet Cherry, & Lactose Added 10% ABV
In collaboration with Octopi Brewing. For this collaboration with our friends at Octopi, we’ve added pineapple, sweet cherry & lactose to this German-style sour wheat ale. The result is a tart & refreshing twist on the classic dessert.
Peach Milkshake IPA 7% ABV
In collaboration with Hanson Brothers Beer. Gaze at the starry skies and enjoy our collaboration, loaded with fruit flavors and aromas from peaches, mosiac, el dorado and amarillo hops, with a light creaminess from lactose.

In collaboration with 4 Hands Brewing Co. Swan fights on the pond next to our brewery inspired the name for this collaboration with our friends at 4 Hands Brewing Co. This Double IPA, loaded with Citra, Cascade & Idaho 7 hops, features notes of tropical fruit balanced with a generous malt backbone.
