LIMITED Release BEER

Scotch Ale 9.1% ABV

This strong scotch-style ale has high maltiness, full body, low hop bitterness, flavor & aroma, low-medium fruity esters, very deep copper color, slight chill haze, clean alcohol flavor balancing the rich and dominant sweet caramel & dark roasted maltiness flavor and aroma with a very low level of peaty/smoky character from the addition of small amounts of peated malt. Belgian-Style Abbey Single Ale 

4.9% ABV

This is a Belgian-style abbey single crafted like those that Trappist monks brew for their own daily consumption. It is light bodied and pale in color with pleasant, spicy phenolics and subtle, fruity esters reminiscent of midwest heirloom fruit trees that give way to a floral and dry finish from noble hops and Belgian yeast.

Weissbier 7% ABV

Rules are meant for breaking when it comes to beer styles. This unrecognized beer style (Imperial Hefeweizen) is similar in flavor and aroma to our Weissenheimer Hefeweizen, but brewed with only the first-wort runnings for twice the strength and body.

Altbier 5.2% ABV

Altercation is a German-style altbier with a malty backbone, notes of caramel, and is satisfyingly full-bodied and well-hopped.

Belgian Strong Golden Ale 6.6% ABV

The best of both brewing worlds: A hybrid Belgian-American strong pale ale with golden-copper color, medium body and maltiness, low caramel/toasty malt flavor, floral and citrus-like American-variety hops used to produce high hop bitterness, flavor and aroma but some phenolic spiciness and high fruity esters from Belgian ale yeast.

Rye Wine-Style Ale Aged with Oak 

12.1% ABV

Evoking memories of our grandparents’ home laden with anitique oak furniture, ornate woodwork, pipe tobacco, toffee candies and perhaps an old, hidden bottle of sherry, Antiquity Rye Wine is a dark copper ale with a spicy/ peppery note from rye combining rich maltiness, oak character and aromas/flavors like melted caramel, toffee, vanilla, sweet chocolate and raisins in a full-bodied beer nicely balanced with a dry, hoppy finish. 

Imperial Pilsen-Style Beer brewed with Oak Spirals 10.2% ABV

Bela may sound like a sweet name, but she’s actually a little bitter. We use generous amounts of Czech Saaz hops in this Imperial Pilsner, showcasing the beautiful spicy and earthy noble hop aroma & flavor, with a hop bitterness that is balanced by a gentle warming, medium body, oak tannins & residual malty sweetness that still finishes dry but is just enough to remind you that Bela might have a sweet side to cozy up to after all.

American-Style Stout 6.7% ABV

An American Stout with medium malt sweetness, chocolate and roasted malt flavor and aroma, dry-roasted bitterness in the finish, full-body and assertive citrus hop bitterness, aroma and flavor.

Black IPA 7.2% ABV

An American-style Black Ale, with all the associated high hop bitterness, citrus/floral hop flavor and aroma, medium-high alcohol content and medium body one would expect with an IPA, but distinguished by its black color obtained by a unique mashing process that reduces the amount of burnt or roasted bitterness, astringency, flavor and aroma from black malts that would otherwise be expected in an American Stout. 

Imperial Red Ale 9.4% ABV

Like the bold colors and patterns of a tie-dye shirt, this Imperial Red IPA is bursting with a deep red color and psychedelic hoppy and fruity aromas swirling within a rich body. Full flavors of caramel, biscuit and toasted malt are interwoven with abundant American hop flavor and bitterness. 

Tart New England Hazy IPA 7.2% ABV

Funkengruven is a fusion of beer styles. We brew half the batch normally and kettle-sour the other half. Summit & Simcoe hops, along with added grapefruit, produce a funky harmony of tart, citrus flavors & aromas that’ll be sure to top the charts. 

Double Dry Hopped Hazy IPA 7.4% ABV

Our Spacedancer IPA features 2-row malt, flaked oats & wheat with Citra & Galaxy hops, delivering a supernova of citrus, melon, peach & guava aromas.

Lo-Cal Hazy IPA 4.0% ABV

Our Soundboard Lo-Cal Hazy IPA is a melody of Citra, Cascade, Summit & Simcoe hops playing off light but balanced malt, for a sublimely mixed beer that is sessionable and blissful music to all the senses.

German-Style Doppelbock 8.1% ABV

Our German-style Doppelbock is full-bodied and light brown in color with aromas of toffee. Flavors of caramel, malt sweetness and a warming finishing make this a perfect beer for pairing with food or celebrating with friends and family.

American Pale Ale 5.2% ABV

A classic American Pale Ale with well-pronounced fruity, floral and citrus-like American-varietal hop bitterness, flavor & aroma, medium body, low-medium maltiness and fruity-ester flavor.

Dunkelweizen 4.9% ABV

A dark German-style wheat beer characterized by a distinct sweet maltiness and a dark chocolate-like character from roasted malt. Fruity and phenolic esters are evident but subdued, the color is dark brown and the beer is appropriately cloudy with yeast. Dunkel is highly carbonated, and hop bitterness is low while hop flavor and aroma are absent.

Belgian-Style Imperial Saison 10.7% ABV

The Duke of Normington is the powerful elder statesman to our family of saisons. The nose of this imperial saison is reminiscent of black pepper & hibiscus, which is then met with flavors of added coriander and hints of cherry bubblegum esters. The beer’s medium body is swept away by a bone-dry finish and subtle notes of traditional spicy Belgian yeast character. 

Belgian-Style Farmhouse Ale with Apricots 7.2% ABV

This Belgian-style Saison, brewed with apricots & coriander, celebrates the Town of Normal’s founding 150 years ago by Jesse Fell. The beer pours a golden-straw color and is bursting with floral & fruity esters. Juicy apricots greet you up front, and a dry finish keeps you coming back for more. 

Imperial or Double IPA 10% ABV

Our mission for this Imperial or ‘Double’ India Pale Ale is to overload the beer with hops for an intense hop bitterness, flavor and aroma while still being balanced by a big malt profile, resulting in a hoppy beer with more dimension. This beer is light copper in color with some hop haze from overloading with dry hops as well. 

Kölsch 4.8% ABV

Kolsch is characterized by a golden color and a slightly dry, subtly sweet softness on the palate, yet crisp. Light-bodied, low hop flavor and aroma and low fruity esters.

Blonde Ale with Lemongrass & Lemon Peel 4.9% ABV

This summertime seasonal beer is light straw in color and has a crisp, dry palate, light body and light malt sweetness. Low to medium hop floral aroma is present, while hop bitterness is low. Fruity esters can be perceived, but the citrus flavors of added lemongrass & lemon peel make this a perfect beer to enjoy while watching your neighbor mow their grass.

Irish Stout 4.6% ABV

This medium-light bodied dry stout has an initial malt & light caramel flavor profile with a distinctive dry-roasted barley bitterness in the finish. Head retention and rich character are part of its visual character. This beer is served using a mixed gas of nitrogen & carbon dioxide.

English Porter 5.9% ABV

In honor of our brewmaster's grandfather who attempted to homebrew long ago back at the family farm, this beer is a full-bodied, London-style robust porter that has a black color with a deep-red tint and strong roast malt flavor balanced by high hop bitterness & aroma and fruity esters. To Pappy!

Belgian-Style Quadrupel 11.6% ABV

Our classic, Belgian-style Quadrupel ale greets you with a stunning chestnut-garnet color and rich aroma of figs followed by dark fruit-like flavors of currants, dates and black cherries which give way to toffee, molasses and hints of lightly roasted fruity coffee and then leaves you with its capstone, spicy dry finish.

American Amber Red Ale 

5.3% ABV

American-style red ale brewed in honor of our Illinois state bird. Medium caramel sweetness balances pleasant hop bitterness, aroma and flavor.

Farmhouse Ale - Saison 6% ABV

This Belgian-style Saison has golden/light copper color, light body, medium hop bitterness, flavor & aroma, medium-low malt flavor & aroma and spiciness from added coriander. Fruity esters dominate the aroma while complex alcohols, acidity, low Brettanomyces character and clove and smoke-like phenolics from Saison yeast.

Robust Porter with Pumpkin Added 5.8% ABV

Our seasonal Pumpkin Porter is made by using several hundred pounds of pumpkins. The beer is black in color with a slight dark-reddish tint. Cinnamon, coriander, allspice, ginger root and nutmeg combine for a beer you only wish your grandma could make.

Blonde Ale with Strawberry Added 5% ABV

This irresistible, fruited blonde ale has copious amounts of real strawberries added to provide flavors and aromas of fresh strawberries and strawberry jam in harmony with a beer that is crisp and dry, golden-strawberry in color, light bodied and balanced by low hop character and bitterness, light malt and fruit sweetness.

Wheatbeer - Witbeir 5% ABV

Hints of fresh oranges and light pepper present aromatically to introduce our Sumner Wit. Presenting with a subtle haze and orange color, this Belgian-style witbier is a great companion to your next warm weather gathering. Between the medium body and dry finish, you'll be left wanting more.

India Black Rye Ale 6.1% ABV

An American-style Black Ale with the addition of rye in the grist for added spiciness and dryness. Assertive hop bitterness, citrus/floral hop flavor and aroma, medium-high alcohol content and medium body one would expect with a Rye IPA, but distinguished by its black color from debittered black malts and a unique mashing process that reduces the amount of burnt or roasted bitterness, astringency, flavor and aroma from that would otherwise be expected in an American Stout. 

Vienna Lager 5.1% ABV

This reddish to copper lager showcases the flavor of Vienna malt and has a distinct toasty malt complexity with just enough Noble hops to create a balance beer. Medium body and dry finish.

Brut IPA 6.9% ABV

The Brut IPA is extremely effervescent and dry, similar to Champagne. Featuring a pale straw color, this beer exhibits low levels of bitterness. Fruity flavors and aromas are achieved by late and dry hopping. It was brewed using a special hop blend from Pink Boots Society, which works to"assist, inspire, and encourage women beer professionals" and benefits a scholarship fund for women in the beer industry to advance their careers through education.

Belgian-Style Tripel 9.7% ABV

Our Belgian-style Abbey Tripel Ale approaches you with a pastoral, pale-colored serenity before unveiling its veracious labyrinth of mildly spicy, fruity and clove-like aromas & flavors, light-medium body and pleasantly sweet but well-attenuated finish. 

Sour Ale with Lactose, Tart Apple & Cinnamon Flavors 4.6% ABV

Our seasonal sour ale is inspired by the flavors of the classic American apple pie dessert. Brewed with tart apple & cinnamon flavors and lactose, this ale hits all the notes with a light body & tart finish. 

Gose Ale with Blueberries, Coriander, & Sea Salt 5.2% ABV

Our Leipzig-style Gose and blueberries are a combination destined to be together, so we've done that for you with this edition of our Gose. The blueberries add another layer of fruity complexity to this sour ale already know for its tart, citrusy qualities while still balanced by the spicy character of coriander and a mineral-mouthfeel from French sea salt.

Sour Berliner Weisse 3% ABV

This 'reverse engineered', Berliner-Style Weisse Beer is our interpretation of a traditional German-style sour that is very pale and light-bodied, low-speed, highly attenuated and pleasantly acidic and lemony-tart from our unique, spontaneous wild yeast and lactic fermentation.

Sour Ale with Cranberries & Sweet Cherries 5% ABV

Our non-traditional Cranberry Criek evolved by merging tart cranberries with sweet cherries, normally associated with a traditional Kriek, but in a kettle sour beer that is wonderfully intricate, balanced, fruity and tart. We then dry-hopped this crimson-colored beer for a touch of citrus aroma and flavor, adding another layer of complexity and a perfect finish.

Tropical Sour Ale with Pineapple, Coconut, Mango, Passionfruit & Guava 6.0% ABV

‘Elima Hua (Hawaiian for Five Fruits) is a refreshing sour ale that tastes like your favorite vacation in paradise. Pineapple, coconut, mango, passionfruit & guava combine for a beer that is fruity, tart & full of flavor.

Sour Flanders Red Ale 5.9% ABV

Flanders Red is a sour ale offering an initial impression of tart cherry candy, dissipating into a complex palate of bright acidity with a backbone of caramel and biscuit malt and minimal hop character. The dry, wine-like finish accentuates the complex malt profile and bright fruit notes showcased in this brilliant, red-colored interpretation of a Belgian-style Flanders.

Dry-Hopped Sour Ale with Key Lime, Vanilla & LactoseApricot 6.0% ABV

We’ve added key lime, vanilla and lactose to our Leipzig-style gose to create a liquid version of the popular dessert. The result is a tart, creamy, refreshing treat for your tastebuds. Now, you can have your pie and drink it too.

Sour Berliner Weisse with Lemon Added 4.2% ABV

We've added lemon to out Berliner-Style Weisse Beer, a traditional German-style sour wheat ale that is pale, light-bodied, low-hopped and highly attenuated, resulting in a lemony-tart, refreshing treat that's perfect for summer.

Fruited Berliner Weisse 4.2% ABV

Lynnbrook, named after our founder's family farm, is a wild Berliner-style Weisse with raspberries added. The result is a refreshing, fuchsia-colored beer with an aroma of raspberry-lemon giving way to hints of brie with subtle lemon and yogurt-like flavors supported by tart, fresh raspberries and underlying lactic sourness.

Gose Ale with Coriander, Sea Salt, Lime & Orange Peel 5.2% ABV

This German-style sour wheat ale is brewed with coriander, sea salt, lime & orange peel, creating a beer that’s packed with citrusy & salty flavors reminiscent of a margarita on the rocks! 

Gose Ale brewed with Pineapple, Coconut, Coriander & Sea Salt 5.2% ABV 

If you like Piña Coladas, then you’re going to love this fun, refreshing take on our Leipzig-style Gose, which is brewed with pineapple and coconut for a tropical twist on this classic sour ale. The combination provides an added layer of sweet, fruity complexity to our Gose that is already known for its tart, citrusy qualities while still balanced by French sea salt and hints of spice from added coriander.

Sour Ale with Raspberry + Natural Flavors 5.0% ABV

Pours a deep pink color with an aroma of tart berries and lemons. Slightly sweet in flavor with notes reminiscent of pomegranate, this sour ale has a moderate dry finish with a hint of tartness. 

Fruited Berliner Weisse 6.0% ABV

This limited release combines a traditional Berliner-style Weisse Bier with apple and raspberry to create a rose-colored refresher. It’s packed with berry and citrus aromas, subtle sweetness, tartness & a dry finish to round out this unique, sour rosé ale. 

Gose Ale with Watermelon, Sea Salt & Coriander 5.2% ABV

This German-style sour wheat ale is brewed with watermelon, sea salt & coriander, creating a beer that's tart & slightly salty, but also refreshingly juicy!

Dry-Hopped Sour Ale 6.0% ABV

Synchopathic is the combination of a refreshingly tart and acidic sour ale with robust-citrusy, fruity & floral dry-hops one would otherwise find in a pale ale, with aromas and flavors reminiscent of grapefruit, orange, lemon, tangerine, pineapple and hints of pine, giving way to a biscuity-crackery malt backbone, low bitterness and dry finish to bring it all in synch.

In collaboration with WeldWerks Brewing Co. New England-style double IPA brewed with Citra, Simcoe, El Dorado & Idaho 7 hops.

Tart New England Pale Ale with Apricot Added 5.1% ABV

In collaboration with Night Shift Brewing  Our collaboration combines some of the best attributes of Night Shift’s hop-forward beers with DESTIHL’s kettle sours. We split this batch in two, brewing half normally and kettle-souring the other half. After both batches were united in one fermenter, we added Apricot and dry-hopped and dry-hopped with a bunch of Mosaic and Citra. The result is a clean, hoppy, juicy pale ale with subtle tartness. 

Tart New England Pale Ale with Boysenberry Added 5.1% ABV 

In collaboration with Night Shift Brewing

Our collaboration combines some of the best attributes of Night Shift’s hop-forward beers with DESTIHL’s kettle sours. We split this batch in two, brewing half normally and kettle-souring the other half. After both batches were united in one fermenter, we added boysenberry and dry-hopped with a bunch of Mosaic and Citra. The result is a clean, hoppy, juicy pale ale with subtle tartness. 

Tart New England Pale Ale with Pomegranate Added 4.6% ABV

In collaboration with Night Shift Brewing

Our collaboration combines some of the best attributes of Night Shift’s hop-forward beers with DESTIHL’s kettle sours. We split this batch in two, brewing half normally and kettle-souring the other half. After both batches were united in one fermenter, we added pomegranate and dry-hopped with a bunch of Mosaic and Citra. The result is a clean, hoppy, juicy pale ale with subtle tartness.

India Pale Ale with Blackberry Added 7% ABV

In collaboration with the Bloomington-Normal Craft Beer Lovers. This brewery-exclusive release is a collaboration with our friends, the Bloomington-Normal Craft Beer Lovers. Brewed with lactose, vanilla, blackberries, citra, mosaic & el dorado hops, this beer will bring you to life.

IPA - Imperial / Double 10% ABV

In collaboration with 4 Hands Brewing Co. Swan fights on the pond next to our brewery inspired the name for this collaboration with our friends at 4 Hands Brewing Co. This Double IPA, loaded with Citra, Cascade & Idaho 7 hops, features notes of tropical fruit balanced with a generous malt backbone. 

Lemon-Tea Infused New England-style Double IPA 7% ABV

In collaboration with Durty Bull Brewing Company.. For this collaboration we added an abundance of Southern Cross hops to this New England-style Double IPA. Notes of spice, citrus, tropical fruit and pine are enhanced by the addition of lemon-tea.

Lager with Corn & Frosted Flakes Cereal Added 5% ABV

In collaboration with Miller Park Zoological Society. Several of the local breweries brewed a special beer to benefit Miller Park Zoo’s “Brews for the Zoo”. Each brewery was given the opportunity to choose a specific zoo animal to theme our beer after & we’ve chosen tiger. Our beer named “Here KittyKitty” is a lager brewed with corn & frosted flakes cereal. 

Irish-Style Stout 4.2% ABV 

A portion of the proceeds from this beer will benefit those with intellectual disabilities and law enforcement charities.

This Irish-style stout is medium-bodied and greets you with aromas and flavors from roasted malts, providing hints of

caramel, chocolate and coffee, with a dry finish.

Dry-Hopped Sour Ale 5.27% ABV

In collaboration with Pipeworks Brewing Co. This collaboration is a light-bodied, dry-hopped kettle sour, featuring Azacca & Cashmere hops for notes of citrus & tropical fruit. It is fermented with a Norwegian yeast strain known for imparting notes of orange & citrus, resulting in a tart, refreshing beer perfect for sharing among friends (or rivals).

Berliner-Style Weisse Beer with Pineapple, Sweet Cherry, & Lactose Added 10% ABV

In collaboration with Octopi Brewing. For this collaboration with our friends at Octopi, we’ve added pineapple, sweet cherry & lactose to this German-style sour wheat ale. The result is a tart & refreshing twist on the classic dessert. 

Peach Milkshake IPA 7% ABV

In collaboration with Hanson Brothers Beer. Gaze at the starry skies and enjoy our collaboration, loaded with fruit flavors and aromas from peaches, mosiac, el dorado and amarillo hops, with a light creaminess from lactose.
